From waiting tables at The Lakeview Café in Austin to put herself through college, Tracy paid her dues and has evolved into one of the restaurant powerbrokers in Dallas-Fort Worth.
(Don’t ask her about that psychology degree from UT. It’s, um, complicated.)
Since moving to Dallas upon graduation and becoming Food & Beverage manager for the Hyatt Regency Hotel, she has carved out a 20-year career in restaurant and hospitality management. In her precious free time when not managing her successful Dallas restaurant – Shinsei – Tracy is an avid art collector, philanthropist and mother of two children.
Tracy grew up in Corsicana, TX, the fruitcake capital of the world. Fortunately, for patrons of Shinsei, her mother was into chocolate cake – which you can find on the dessert menu.
